you can make mst any forks ft with some effort but 100% MEASURE first, especially the length of the headtube. I haven't seen those EBR's but the generic EBR's are shorter headtube (180mm) which is too short, but I've heard best luck with ones for the vespa grande which is 220mm, but may be too long needing some spacers (MUCH easier to have too long a headtube than too short). The 195mm on those you posted, maybe that's right, but do measure... I'm pretty sure you need the 220mm
As for cylinder kit, probably makes sense to order one also from wherever along w the forks. The Athena reed 80 is by FAR the fastest but also creates most issues especially with the notoriously difficult sachs clutches. Athena piston port 70 is a good solid kit, but recently most folks prefer the slightly cheaper airsal sachs kit, which also includes an intake, works pretty OKish with stock carb and stock exhaust header (use clamp-on expansion or weld on whatever chamber). The airsals seem to be widely regarded as simple reliable and quick. https://www.treatland.tv/sachs-AIRSAL-43-5mm-70cc-cylinder-kit-p/sachs-airsal-kit-012002435.htm with downsides that the intakes only work for the stock square bing (you can buy a better intake for a better carb) and the exhaust is the sachs flange style (while Athena is a flat port allowing you to use sachs flange style or puch minarelli etc bolt-on pipes)
