Sambal oolek is pretty much just un-processed siratcha, made by the same people too...it's great with alotta stuff, but I prefer the chilli garlic sambal they make.
My favorite local restaurant uses this mysterious Korean sambal stuff(not gochujang) in their spicy chicken teriyaki... Not really teriyaki but grilled chicken thighs in this awesome dark red sauce with chillis and onions....been trying to get them to tell me what it is for years.
